The EM-10 Electric Pin-Bone Remover is an adjustable pin-bone remover designed for Salmon and Trout.

The EM-10 is the original electric hand-held pin-bone remover. It has been manufactured in Europe for decades. It is a proven performer that can process 4 salmon fillets per minute.
It is designed for Salmon and Trout, works well with Whitefish and Steelhead, and may work with other fish with bones of similar size and shape to these species. If you are doing small trout or perch filets, there is a nylon guide for small fillets down to around 5.5 oz (150g).
Guides for Salmon and Trout
This is the nylon guide that moves over the fish. The grooves help guide the bones onto the wheel at the optimum 90 degrees angle.

Space between guide and wheel is adjustable
The distance between the guide and the wheel can be fine tuned for small or large fish. Loosening or tightening these screws narrows or widens the gap between the nylon guide and the wheel that pulls out the bones. The adjustment screws are on the back of the nylon guide holder.
Removes ALL Bones
The EM-10 removes ALL bones, including the neck bone, with very little waste. It can be the only pin-boner used or as cleanup in larger operations after an automatic pin-bone remover.----------
Left Hand or Right Hand
Choose either the left or right hand (90+ %) version. Right: Put fish in front of you, head on left. Go from head to tail using the right hand. Left is the opposite.

Water Rinsing is Standard
This machine comes standard with water rinsing. This is a highly desirable feature. It washes away the bones that are removed and allows you to position your pin-boning station without a faucet.
PLEASE NOTE: You can rinse the bones off, but cannot submerge the unit in water. You cannot dip it into a pail. The motor inside the handle will rust and void the warranty.
Unlike many other machines, our pin-bone removers use electric motors. Other pin-bone removers use compressed air, which requires more maintenance, causes more down time, and results in cold handles for the operator.

Packaging and Components
The EM-10 is shipped in a sturdy plywood box.
The control box is mounted on a wall, preferably in back of the operator. It is mounted by drilling two screws into the wall mount plate on the back of the machine. This holds it on the wall.
There are 3 controls on the control box:
- On/Off Switch
- Wheel Speed Control
- Water flow valve with hose attachment
The unit comes without a plug due to the many different kinds of plugs used throughout the world. You buy and attach the plug that works in your area. It will operate at 110v to 240v automatically.
It does come with one extra nylon guide which should be changed after approximately 750 hours of use.

Installation of Water Line
When you first set up the machine, you plug one end of the blue water line into a fitting on the hand piece and the other into a fitting on the control box. You simply push it in. If it will not pull out, it is properly installed. To remove the line, you hold the black plastic collar in and pull the line out.
Next, attach a water hose to the unit. It accepts hose with a 3/8" inside diameter.
The water output is controlled by the knob in front. You do not need much flow. The water flows continuously in operation.

Pin-Boner Wheel Speed
It takes a while to get used to operating a pin-bone machine, so we recommend that you set the speed between 4 - 6 on the control. After a few days you will see what speed works best for you. It can be different for each operator.

Maintenance
At the end of the day cleanup is quick and easy.
Remove the Nylon Guide by hand.
Wash it, and put it back on.
No tools required.
Over time, the motor and the nylon guides will need to be replaced. The motor normally lasts about 2500 hours and the nylon guide about 750 hours. There are 2 types of nylon guides, one for Salmon, and one for smaller trout.
